Debuts at Splendour in the Grass
With the sell out success of last year’s pop up dining experience still tingling the taste buds, Splendour in the Grass is lifting the cloche on 2019’s hot ticket, a new partnership with one of Australia’s most creative entrepreneurs, restaurateur Maurice Terzini and his iconic Bondi Beachside restaurant, Icebergs Dining Room and Bar.
Maurice’s inspiration comes from juxtaposition, a fine dining experience within the rambunctious and raucous environment of Australia’s biggest music festival. He is passionate about the blurring of spaces and preconceptions – restaurant vs bar vs club – and obsessed with food, fashion, art and music, bringing to life an experience that speaks to each and creates something new and compelling for audiences to enjoy. Through this signature raw, rock n roll lens, Icebergs Dining Room and Bar will be lovingly and creatively reinterpreted at Splendour in the Grass 2019. Positioned in a private and picturesque backstage location overlooking a lake, think Bondi Icebergs goes punk rock.

A truly exclusive and unique event paired with innovative and delicious mixed drinks, the highest quality three course feast curated carefully to tantalise your taste buds, and the perfect playlist to live your absolute best life at your favourite festival.
The 100 seat pop up Icebergs will feature a special Splendour in the Grass menu created by Icebergs’ Executive Chef Monty Koludrovic. Joining Monty will be the well-known and highly regarded team from Three Blue Ducks. Their love of real food and supporting local producers makes a perfect combination that you won’t want to miss.

The three course menu inspired by Maurice’s Italian roots and love for food and culture, will include options such as nodini di mozzarella, a decadent Yarra Valley caviar croccante, grilled pickled octopus, Randall Family Koshi risotto with saffron, crab and celeriac, Koji grilled lamb neck, smoked garlic, sorrel and fermented chilli salmoriglio, twice cooked free range chicken with ginger sauce, a pea, herb and almond salad to pair, and a tableside candied macadamia and chocolate tiramisu to get your mouth watering. Vegetarian and vegan options will also be available.
The Icebergs Dining Room and Bar at Splendour will feature Smirnoff Infusions as the lead product and will be showcased alongside drinks curated and carefully selected by the highly acclaimed Matthew Whiley of Scout Sydney and London and James Hird, Icebergs Sommelier.
Simone Ramjee, Icebergs’ Events and Marketing Manager also brings her well-rounded expertise to the event to round off an incredible team to provide guests with the full Icebergs experience at Splendour in the Grass.
Guests will be greeted with a Smirnoff Infusions welcome drink on arrival – the newest premium spirit infused with natural fruit and botanical extracts. Simply add soda for a naturally fresh, light and interesting taste that’s under 40 calories a serve and perfect for the day. Smirnoff infusions launches nationally at the end of August so this unmissable event is your exclusive chance for a first taste.
The Icebergs Bar will also feature curated beverages using ORGANICS by Red Bull soft drinks – a refreshingly natural beverage that can be consumed on its own or as the perfect mixer accompaniment to quality mixed drinks.
Beer on serve will be from Belgium’s iconic Brewery, Hoegaarden. This original Belgian Witbier (white beer) has a slightly sweet and sour taste, with zesty citrus notes, and has aromas of orange peel, coriander seeds and herbs from Curacao. The character of the wheat beer means it goes well with many and varied flavours and the citrus notes pair well with many dishes.
All beverages will be perfectly balanced with Monty’s carefully created food menu – available to purchase via contactless and mobile payments.
If you still haven’t had your fill of Icebergs at Splendour after your exclusive dining experience, your ticket also acts as an exclusive invitation to Icebergs’ ‘Italo Dining & Disco Club’ on Sunday, 11pm – 2am.
